100g butter, 150g icing sugar, 150g plain flour, 25g ground almonds, 2tsp vanilla essence, a big pinch of salt. Pre-heat oven to 180oC, gas mark 4.
Cream butter and half the sugar. Mix in flour, almonds, vanilla and salt and knead together. Wrap in clingfilm and refrigeratre for 30 minutes.
Roll into small balls, place on a greased sheet and bake for 12 minutes or until golden. Then roll in the remaining icing sugar.
